Lisa: Here is one of the many recipes from Chef Sophie’s repertoire:
Shrimp with Pomegranate Sauce
Ingredients
8 medium-sized shrimp
1 small onion, diced
coconut oil
salt, lemon pepper, paprika to taste
1 tsp freshly grated ginger
drizzle of pomegranate molasses
juice from one lemon
Directions
Sauté the onions in coconut oil until brown. Add the shrimp and cook 2 minutes on 1st side, then 1 minute on the other side. Remove from pan and set aside. Add to the pan salt, lemon pepper, paprika, ginger, pomegranate molasses, and lemon juice. Stir and cook 1 minute. Then add the shrimp back to the pan. Stir, and then serve over previously cooked quinoa.
